This is a really simple preparation/recipe for a quick cold snack anytime. They’re also somewhat healthy and low calorie. The recipe came from HungryGirl’s 200 under 200 cookbook.
1 medium-large banana
2 tablespoons Cool Whip Free, thawed
1 tablespoon reduced-fat peanut butter, room temp
Directions: Cut banana into 20 circular slices. Lay ten slices flat on a plate and set all of the other slices aside. In a small bowl, mix Cool Whip and peanut butter until blended. Evenly distribute PB mixture on top of the banana slices on the plate. Finish off by placing another banana slice on top of each covered slice, making 10 mini sandwiches. Freeze until solid, about 1 hour. Store in the freezer until ready to serve. Enjoy! (makes 2 servings)
PER SERVING (5 poppers): 108 calories, 3g fat, 57mg sodium, 18.5 carbs, 2g fiber, 8.5g sugars, 2.5g protein
The batch I made was really good, but the banana froze quickly and the filling didn’t really. Not that its a bad thing, I was just surprised to find the inside still soft when the bananas were frozen solid. The recipe also states that if its been longer than a day or two the poppers need to be thawed slightly before eating.
